White Chili with Chicken


Yesterday was c..c..cold.  And if that wasn't bad enough, it was windy too.  Man, aren't those the best days for some chili?  I tried out a new recipe last night.  I liked it and would make it again.  The husband had no comment. The 7 yr old didn't like it...but ate two bowls of it!  And the 2 yr old went screaming from the table (but in all fairness, he does that nearly every night).  Sheesh! We're gonna need a better rating system than that. 
I ended up using a can of chicken (yeah, I don't do that often), which made this a quick, easy meal.  We all need one of those once in a while!

White Chili with Chicken
Recipe from Taste of Home

1 medium onion, chopped
1 jalepeno pepper, seeded and chopped
2 garlic cloves, minced
1 Tbls vegetable oil
4 cups chicken broth
2 cans (15.5 ounces each) great nothern beans, rinsed and drained
2 Tbls minced fresh parsley  (I don't do parsley)
1 Tbls lime juice
1 tsp ground cumin
2 Tbls cornstarch
1/4 cup cold water
2 cups cubed cooked chicken

Directions
In a large saucepan, cook the onion, jalapeno and garlic in oil until tender.  Stir in the broth, beans, parsley, lime juice and cumin; bring to a boil.  Reduce heat; cover and simmer for 10 minutes, stirring occasionally.

Combine cornstarch and water until smooth; stir into chili.  Add chicken.  Bring to a boil; cook and stir for 2 minutes or until thickened.

    but it is WAY too spicy for the kids. And it doesn't look as appetizing as your picture. I like to use cannellini beans (AKA white kidney beans).

  2. Yours sounds good too! I didn't even think about cheese. I guess seeding the jalepeno helped because this wasn't spicy. Or maybe I just lucked out with a mild jalepeno :)

  3. I think the hubby and I would LOVE this, pretty sure that the kids wouldn't touch it (well, Lele might give it a try), but it looks so yummy! I'm willing to take a chance! ;-)
